Caribbean dinner for leaders at Summit of the Americas

Port of Spain, April 19 (DPA) The menu for Saturday's official dinner for leaders from 34 countries at the Summit of the Americas in Trinidad and Tobago was set to reflect the diversity of Caribbean cuisine.

 

For the banquet at the Hyatt Regency, a luxury hotel in Port of Spain with a spectacular view of the sea, a team of 80 chefs created a five-course menu, starting with a fried yucca and plantain pie.

 

 

Also included were corn soup, grilled beef, lamb and pork, mashed potato with arugula - a favourite of US President Barack Obama, salmon, and shrimp and crab ceviche.

 

 

There was also coo-coo, a dish that is typical of the Caribbean and made of okra, corn flour and butter. Desserts include sweets and fruit from the Caribbean region.
