Chicken Piccata
Ingredients
To marinate
Chicken Breast - 3
Pepper - 1 tsp
Salt to taste
Mediterranean seasoning - 1 tsp
Italian seasoning - 1 tsp
Cayenne Pepper - 1 tsp
Tri-color bell peppers - 1 tbsp
Olive oil - 2 tsp
Parmesan cheese - 1 tbsp
Egg - 2
Flour - 1 cup
Panko crumb - 100 gms
Oil for frying
Method:
1. Take the supreme (inner) portion of chicken breast.
2. Marinating the chicken: Add pepper, salt, crushed cayenne pepper, Mediterranean and Italian seasoning, colour peppers, olive oil, parmesan cheese and mix well. Let it be Marinate for about 30 minutes.
3. Dip the chicken piece with marinated seasoning to flour, beaten egg and then to the Panko crumb. Gently press so the crumbs sticks to the chicken breast.
4. Deep fry the chicken pieces to a lighter brown colour. you can also fry potato wedges or potato fries along.
5. Serve the chicken picatta and fries together.
