Amaranth Stir Fry (Siru-Keerai Poriyal) - Recipe
Ingredients: Green Amaranth (Siru Keerai) - 2 bunches (chopped)
Oil - 2 Tbsp
Urad Dal - 1 tsp
Cumin seeds - 1 tsp
Mustard seeds - 1/2 tsp
Red chilis - 5 nos
Garlic cloves - 10 nos (pounded)
Asafoetida powder - 1/2 tsp
Curry leaves - a handful
Salt
Turmeric powder - 1/2 tsp
Garnish with Fresh grated coconut
Method:
1. Heat oil. Add Urad dal, Cumin seeds, Mustard seeds, Red chilis, Garlic cloves, Asafoetida powder & Curry leaves. Saute till you get a nice aroma.
2. Add the chopped Amaranth greens (Siru Keerai), Salt & Turmeric powder. Gently mix
3. Close and cook in medium flame for 5 to 10 minutes
4. Open and cook in high flame for 2 to 3 minutes or till the excess moisture is reduced
5. Turn off and garnish with fresh grated coconut.
