Assorted Tempura

Assorted Tempura Ingredients Non-veg Prawn - 3 pieces Fish - 2 slices Squid - 2 slices Vegetables Brinjal - 1/4 Carrot - 1/4 Zucchini - 1/4 Bell pepper - 1/4 Baby corn - 2 For Batter Refined flour - 4 tsp Corn flour - 4 tsp Baking powder a pinch Water For Tempura Sauce Water - 500 ml Dashi no moto - 1 tsp Kikkoman Soy - 120 ml Mirin - 100 ml Method: 1. In a bowl mix Refined flour, Corn flour, Baking powder & Cold Water. Batter should not be very thick or thin. 2. Trick to make Prawn straight - Make a couple of slits underside. Hold the Prawn with both hands and bend it backwards to make it straight. 3. Fish & Squid cut in to finger size. 4. Dust refined flour on top of Prawn, Fish & Squid. 5. Heat Oil in a deep pan. Coat the prawn in batter. Don't leave the prawn, keep on roll the prawn in a fryers & then leave it. Same process repeat & sprinkle batter on prawn, fish & squid. 6. Fry it till golden brown colour. Remove the Prawn, Fish, Squid tempura from oil. 7. Dust refined flour on top of Vegetables. Coat the vegetables in batter. Same process of Non-veg Tempura. 8. To make Tempura sauce - In a deep pot add Water, Dashi no moto & stir it. 9. Add Kikkoman Soy, Mirin & stir it. Wait till it boils. Then Transfer the sauce in a serving bowl. 10. Serve Assorted Tempur
