Sweet Boondi
Ingredients
All Purpose flour (Maida) - 3/4 cup
Sugar - 3/4 cup
Milk - 1 1/2 tbsp
Semolina (Rava) - 1 tbsp
Ghee - 2 tsp
Cardamom powder - 1/4 tsp
Water
A few Raisins
A few Cashew nuts
Method:
1. First we need to make batter, In a bowl add All Purpose flour (Maida), Milk, Semolina (Rava) and enough Water to get thick batter. Keep aside.
2. Heat ghee in a pan, roast the Cashew nuts & Raisins, keep them aside.
3. Next Sugar syrup with the same pan, add sugar, little water, Cardamom powder & mix it, keep the flame in low.
4. Once sugar caramelized turn off the stove.
5. Now we make Boondi with help steel ladle with small holes.
6. Heat oil in a kadai, pour the batter mixture over the ladle with small holes & you will get small tiny balls, that's the boondi. Fry till golden brown colour.
7. In a bowl add roasted Cashew nuts, Raisins to the fried Boondi & mix it. On top of it add Sugar syrup & mix it.
8. Enjoy the Sweet Boondi
